Foie gras de canard mi-cuit
This foie gras is pasteurised, not preserved. It keeps in
a fridge (4-6°C / 39-42°F) four months after fabrication.
If you plan to eat it in more than three months, you may
deep-freeze it; when you decide to eat it, take it out of
the freezer the day before to let it unfreeze slowly in
the fridge. A reasonable individual portion of foie gras
is about 50-60 grams (2 oz). Take it out of the fridge 20
minutes before eating it. Use a sharp knife that you'll
have dipped in hot water to make slices easily. Place them
on salad leaves and serve them with toasted bread, sweet
white wine (Monbazillac, Sauternes) or red wine.
Tinned foie gras
Tinned foie gras keeps four years after fabrication.
It may be stored in a cool place (15-18°C / 59-64°F),
not necessarily a fridge. Put it in a fridge one hour before
opening the tin. Turn it out on a plate adorned with salad
leaves and serve it plain or with toasted bread (like foie
gras mi-cuit).
Confits de canard (preserved legs)
Open the tin and place it in a warm oven until the fat
melts. Take out the legs and breasts and brown them preferably
on an oven grill, or in a frying-pan. Serve them with potatoes
fried in the leftover fat or with green beans coooked with
chopped parsley and garlic.
Magrets de canard frais (Fresh duck breast steaks)
They keep in the fridge for two weeks after being vacuum-sealed
or 15 months in a freezer. In the latter case take them
out of the freezer one day before serving them and let them
unfreeze in the fridge. Magrets are cooked in a frying pan,
in an oven or on a grill. Cut the surface of the fat side
and brown it before turning over the steak and finish browning
the meat. Serve magrets whole or in slices.
Magret de canard séché (Dry duck ham)
It keeps in the fridge four months
in its sealed bag but only a month after opening; it should
then be wrapped in a cloth, tinfoil or cellophane. Cut it
in very thin slices to be served as snacks or in a salad. |
